Mama is a brand that’s been in my life since I was a kid. The Tom Yum Shrimp was always in our house growing up and I’ve been working my way through the rest of the lineup ever since. The Green Curry is a completely different taste from the Tom Yum.

What’s in the Package
Inside is a rectangular block of thin, wavy pre-seasoned noodles. It comes with two sachets: a dual-chamber packet containing the green curry powder and chili, and a packet of seasoned oil.

How to Prepare MAMA Green Curry Instant Noodles
The package instructions suggest to place everything in a bowl, add 1.5 cups (350ml) of boiling water, and cover for 3 minutes. However, we suggest using only 300ml of water (about 50ml less than the box says) to keep the broth from tasting thin. For an even bigger flavor hit, drain the water completely after 3 minutes and toss the noodles with the seasonings to eat it dry style.

How Does It Taste
The broth surprised both James and me. It doesn’t look particularly rich but it’s really creamy and it caught us off guard. The green curry flavor comes through clearl. It doesn’t have extreme depth but it’s more convincing than most instant curry ramens manage.
The backend spice builds quietly at a 1 out of 5. It’s not upfront heat. James appreciated that it wasn’t too challenging.
Noodles are thin and wavy at a 1 out of 5 on thickness. The noodles had a slightly cardboard-y taste that we didn’t really like. The broth is what we loved here the most.
How Does It Compare
Within the Mama lineup the Green Curry sits between the clean simplicity of the Chicken and the sour brightness of the Tom Yum Shrimp. The Tom Yum is still the benchmark for me since it’s the one I grew up with and nothing in the Mama range has topped it. But the Green Curry is the most pleasant surprise I’ve had working through this lineup.

How to Level It Up
Add some fresh Thai basil right before serving. It makes the broth taste noticeably more like a restaurant green curry. A small spoonful of green curry paste stirred into the broth helps even further. Start small, it’s easy to overdo. Also toss in some rotisserie chicken for extra protein.
Final Verdict
The Mama Green Curry Instant Noodles was a pleasant surprise from a brand I already trusted. The creamy broth is better than it looks, the green curry flavor is convincing for an instant product, and the subtle backend spice keeps things interesting.

This one along with some other mama flavors used to be one of my autism comfort meals!! I haven’t had it in a while but it’s very cheap and inoffensive, i feel like you can never go wrong with it ๐
These are my absolute favourites. I use a 50/50 blend of bone broth and coconut milk for the soup base. Add ins include quail eggs, fish ball, fresh lime, a splash of fish sauce and fresh coriander ๐คค
