When I first tried the MAMA Green Curry Instant Noodles, I was pleasantly surprised by how flavorful it was. While it might not have extreme depth, the curry taste itself is fantastic, with a subtle backend spice.

The broth may not look rich at first glance, but it is actually pretty creamy and similar to other MAMA noodles, itโ€™s also very comforting.

To get a more concentrated flavor, I’d probably use about 50 milliliters less water next time. Or, dare I sayโ€ฆthis might actually be even better eaten dry instead of in a broth. But thatโ€™s up to you to decide.

To really elevate this dish and give it more dimension, Iโ€™d recommend adding basil, a little dab of extra curry paste if you have some on hand, and poached chicken for protein. Tip: use rotisserie chicken for a quick hack!

While the noodles are admittedly not my favorite, the strength of the green curry makes this one a winner for a comforting and flavorful meal.

For the spice level, my friend James, who taste tests the ramens with me, gives his rating out of 5 based on his experience with the heat. My own spice tolerance tends to be higher than most, so James’s rating gives a more general sense of the spiciness. Keep in mind that spice is still subjective, so what’s mild for him might be spicy for you, and vice versa!

What does “Broth Viscosity” mean?

That’s how thick or thin the broth is. A 1/5 would be very watery, while a 5/5 would be super thick and almost syrupy.

How do you rate “Noodle Thickness”?

This is just a general gauge of how thick the noodles are compared to other instant ramen noodles I’ve tried. A 1/5 would be very thin, like vermicelli, and a 5/5 would be very thick and wide.

What do you mean by “Noodle Type”?

Here, I’m just describing the style or texture of the noodles, like “udon-like” for a chewy and thick noodle, or “thin and curly” for a more classic instant ramen style.
