This is MAMA Pho Bo which is a Vietnamese-style beef pho in instant flat-rice-noodle format. MAMA is the famous Thai brand (produced by Thai President Foods), but this product targets Vietnamese pho flavor.

What’s in the Package

Inside the pack you get a bundle of thin flat white rice noodles (banh pho) and two small sachets: a black-and-silver seasoning powder packet and a red sauce/oil packet. It’s a classic MAMA-style minimal packet setup.

How to Cook MAMA Pho Bo Beef Noodle Soup

  1. Add the noodles and empty the seasoning packets into a heat-safe bowl.
  2. Add 360ml of boiling water into bowl.
  3. Cover and let sit for 2 minutes.
  4. Uncover, stir well, and enjoy.

How Does It Taste

This one surprised me on the flavor side. We noticed this the broth leans heavy on Asian cinnamon. Most instant pho I’ve had leans on artificial beef flavor with a thin gesture at pho spices. This MAMA version actually puts the cinnamon and star anise forward, which pulls it closer to the real dish.

The broth on its own is salty. I’d call it a touch too salty straight from the sachet. The noodles are thin, flat rice noodles (banh pho-style vermicelli). They take on the broth properly and they’re the highlight of the bowl.

There’s no real beef depth. It’s artificial beef flavor on top of a cinnamon-anise aromatic base. If you weren’t told, you could identify this as pho by the spice profile alone. The MSG and salt carry the rest.

The bowl comes in at a reasonable 200 calories, which for the noodle volume is on the lighter side.

How Does It Compare

The closest references on the site are the other Vietnamese pho instants. The Nguyen’s Pho Seafood is the seafood variant of the same genre. The Acecook Oh! Ricey Pho Chicken and the Nongshim Taekyung Pho are other instant pho references on the site.

Against those, this MAMA Pho Bo has the strongest cinnamon-anise smell and it’s one of the more authentic-feeling pho spice than most instants I’ve tried. The Nguyen’s is seafood-focused so different direction. The Nongshim Taekyung leans spicier. If you want the cleanest instant take on the classic pho bo beef flavor, this MAMA is the pick.

How to Level Up MAMA Pho Bo Beef Noodle Soup

This packet is practically a pho starter kit. The absolute minimum is a squeeze of lime. Fresh lime juice at the end is the biggest single upgrade since it pulls all the cinnamon and beef notes into proper pho territory and balances the salt.

Bean sprouts on top. Fresh Thai basil leaves. And for protein: thin-sliced raw beef (like you’d use for pho tรกi) dropped in the hot broth to cook through. Leftover rotisserie chicken or cooked brisket works too.ย Vietnamese beef meatballs (bรฒ viรชn)ย would be perfectly at home.

Final Verdict

The MAMA PhแปŸ Bรฒ Beef Noodle Soup is a surprisingly good instant pho with real cinnamon-and-star-anise spice depth. Salty on its own, but the rice noodles and proper garnishes balance that out. I’d buy this again.
