The Unif Tung-I Beef with Herbs Ramen Noodles is a product of Vietnam that brings a very specific nostalgic flavor profile to the table. The herbs in the name refer to rau rฤƒm, also known as Vietnamese coriander, which gives this bowl a distinctive character you won’t find in your typical instant beef ramen. From the moment we opened the package the smell was comforting and inviting.

How to Prepare

Add the noodle brick and all the packets directly into a bowl. Pour about 350cc of boiling water, cover and let it sit for 3 minutes. Stir well and enjoy.

How Does It Taste

The broth is the star of this bowl. It has a surprising amount of depth and a good mouthfeel thanks to a noticeable oiliness that keeps it from feeling one dimensional. It hits you with a savory MSG punch and a slight sour note that we found delicious and reminiscent of childhood comfort foods. The beef flavor is artificial but it works in the context of the overall profile.

The noodles are thin and honestly a bit cardboard-like, very similar to the texture you get with Mama brand Tom Yum noodles. They serve as a decent vessel for that savory broth but they are not a standout on their own.

How Does It Compare

This sits in a unique lane among Vietnamese instant noodles. The rau rฤƒm herb note gives it a flavor that is distinctly different from a standard beef broth and closer to something you would find in a Vietnamese home kitchen. If you enjoy the flavor profile of pho or bun bo hue you will find something familiar here even if the execution is clearly instant noodle rather than restaurant quality.

How to Level It Up

Since the broth is so beefy and savory this bowl calls for protein. I recommend fish balls, Vietnamese beef meatballs, fresh beansprouts and some fresh herbs on top would also go a long way toward making this feel more complete.

Final Verdict

A nostalgic and comforting bowl that punches above its weight on broth flavor. The noodles let it down but the savory oily broth with that rau rฤƒm herb note is delicious and worth seeking out. Best experienced with some Vietnamese beef meatballs dropped in.
