I have made dozens of ramen spring rolls at this point. Maybe hundreds. They are one of the things I keep coming back to because the format is so forgiving and the filling options are endless.
This one came together because I had never rolled a green apple into one. I always want something acidic in my spring rolls. Kimchi, pickled carrots and daikon, anything sharp that cuts through the rich filling. Green apple does the same job. Tart, cold, snappy, and a little sweeter than a pickle. Once I tried it with Buldak Carbonara, I was annoyed it took me this long.

Why Green Apple Works in Buldak Carbonara Spring Rolls
Buldak Carbonara is already doing most of the work. The sauce packet has that creamy-spicy profile, and once you hit it with a splash of starchy noodle water and a handful of fresh mozzarella, it bonds into a glossy cream that coats every noodle. That is the star.
Everything else is built to contrast it. Tart cold apple cuts the richness. Egg ribbons add softness without stealing the show. Spam brings a salty bacon-like crunch that plays off the spicy cream. A lettuce leaf sits on top of the noodles as a shield so the rice paper does not turn soggy before the first bite.

Instructions
Start with the prep. Slice the Spam into long uniform rectangles. Whisk the eggs.

Make egg ribbons first. Melt a little butter in a nonstick pan over medium heat, pour in the whisked eggs, and swirl into a thin sheet. Cook one side until the top is just set, flip once, then move the sheet to the cutting board to cool. Once cool, roll it up and slice into thin ribbons.

Sear the Spam in the same pan. Once the eggs are off, drop the Spam strips into the pan and let the heat work them slowly. The fat renders out and you get deep-golden strips that crunch at the edges. Drain on paper towel.
Boil the Buldak Carbonara noodles for 4.5 minutes. Before draining, reserve some of the starchy noodle water. Return the noodles and that water to the pot over low heat. Add the sauce packet, powder packet, and torn fresh mozzarella. Stir fast for 30 to 45 seconds until glossy. Fold in the flake packet last.

Cut the green apple last. Slice planks off the core, skin on, then cut those planks into thin matchsticks. Saving the apple for the end keeps it from browning and it goes into the roll ice cold.
Assemble with Spam on the bottom, then egg ribbons and apple matchsticks, then a generous creamy heap of noodles, then a lettuce leaf tucked over the top. Fold the sides in, roll tight, slice on a bias, serve immediately.
How to wrap a rice paper spring roll without tearing it
This is where most people lose these rolls. Start with the right wrapper, then follow two rules.
I use Three Ladies Brand rice paper. From my experience it is the strongest of the ones I have tried and tears the least, even when the roll is heavy. If your wrapper is already fragile before you dip it, no technique is going to save you.
Surface-wet only. I spin the rice paper through my rice paper holder just long enough to wet the surface on both sides, then it hits the board. The wrapper should still feel firm when it goes down. It keeps softening on its own while you load it. If you wait until it goes limp in the water, it will tear as soon as the filling lands on it.
Wrap as tight as you can. Fold the sides in, tuck the filling under your fingers, and roll away from you with steady pressure. Loose rolls look soft and fall apart on the plate.
The lettuce leaf on top of the noodles is doing a job too. It sits between the rice paper and the saucy noodles and shields the wrapper from the heat and moisture.





How to serve them
These are finger food. Two halves per person as a starter, four halves as a light meal. Eat them as soon as they come off the board. Rice paper tightens up and gets hard once it sits, so these do not hold. If you want more heat on the side, a spoon of chili oil goes well with the creamy sauce.

FAQ
Can I use a different apple?
Granny Smith is the one I reach for because it is tart and stays crisp. Honeycrisp works if you like sweeter and can accept a little less crunch. Red Delicious goes soft and mealy inside the roll.
Why did my rice paper tear?
Two reasons usually. You soaked it too long and it went past wet into limp. Or you skipped the lettuce shield and the hot sauce ate through the paper. Surface-wet only on the dip and keep the lettuce between the paper and the noodles.
Can I skip the Spam?
You can. Slow-rendered bacon strips are the closest swap. You want a salty, crispy, fatty strip as the base.

Green Apple Buldak Carbonara Spring Rolls
Ingredients
- 1 packet Samyang Buldak Carbonara Ramen
- 4 rice paper wrappers
- 70 g Spam, cut into 4 long rectangles (about one-quarter of a can)
- 2 large eggs, whisked
- 7 g butter or neutral oil, for the egg sheet
- 1/2 Granny Smith green apple, skin on, julienned into thin matchsticks
- 4 leaves green leaf lettuce
- 30 g mozzarella, torn or shredded
Instructions
- Slice the Spam into 4 long uniform rectangles. Whisk the eggs in a small bowl.
- Melt the butter in a nonstick pan over medium heat. Pour in the whisked eggs and swirl into a thin sheet. Cook one side until the top is just set, flip once, then move to the cutting board to cool. Roll up and slice into thin ribbons.
- Drop the Spam strips into the same pan over medium-high heat. Sear on all sides until deep golden and crisp, letting the fat render out as it goes. Drain on paper towel.
- Boil the Buldak Carbonara noodles for 4.5 minutes. Before draining, reserve 4 tablespoons of the starchy noodle water.
- Return the noodles and reserved water to the pot over low to medium heat. Add the sauce packet, powder packet, and shredded mozzarella. Stir fast for 30 to 45 seconds until thick and glossy.
- Slice the green apple off the core, skin on, then julienne the planks into thin matchsticks. Cut it last so it stays cold and bright going into the roll.
- Dip one rice paper wrapper through warm water just until the whole sheet is wet. Lay it on the board while it still feels firm.
- Layer on the wrapper in this order: 1 Spam strip, a pinch of egg ribbons, a few apple matchsticks, a generous heap of creamy noodles, and one lettuce leaf tucked on top.
- Fold the sides in and roll away from you as tightly as you can. Slice in half on a bias. Repeat with remaining wrappers. Serve immediately.
