Green Apple Buldak Carbonara Spring Rolls

Creamy Buldak Carbonara noodles, crisp green apple, egg ribbons, and seared Spam rolled in rice paper. Twenty minutes, four rolls, eight bites.

Ingredients

  • 1 packet Samyang Buldak Carbonara Ramen
  • 4 rice paper wrappers
  • 70 g Spam cut into 4 long rectangles (about one-quarter of a can)
  • 2 large eggs whisked
  • 7 g butter or neutral oil for the egg sheet
  • 1/2 Granny Smith green apple skin on, julienned into thin matchsticks
  • 4 leaves green leaf lettuce
  • 30 g mozzarella torn or shredded

Instructions

  • Slice the Spam into 4 long uniform rectangles. Whisk the eggs in a small bowl.
  • Melt the butter in a nonstick pan over medium heat. Pour in the whisked eggs and swirl into a thin sheet. Cook one side until the top is just set, flip once, then move to the cutting board to cool. Roll up and slice into thin ribbons.
  • Drop the Spam strips into the same pan over medium-high heat. Sear on all sides until deep golden and crisp, letting the fat render out as it goes. Drain on paper towel.
  • Boil the Buldak Carbonara noodles for 4.5 minutes. Before draining, reserve 4 tablespoons of the starchy noodle water.
  • Return the noodles and reserved water to the pot over low to medium heat. Add the sauce packet, powder packet, and shredded mozzarella. Stir fast for 30 to 45 seconds until thick and glossy.
  • Slice the green apple off the core, skin on, then julienne the planks into thin matchsticks. Cut it last so it stays cold and bright going into the roll.
  • Dip one rice paper wrapper through warm water just until the whole sheet is wet. Lay it on the board while it still feels firm.
  • Layer on the wrapper in this order: 1 Spam strip, a pinch of egg ribbons, a few apple matchsticks, a generous heap of creamy noodles, and one lettuce leaf tucked on top.
  • Fold the sides in and roll away from you as tightly as you can. Slice in half on a bias. Repeat with remaining wrappers. Serve immediately.
