The Samyang Buldak Carbonara is probably the next most popular Buldak flavor after the original and it earns that position. It’s the perfect gateway for people with lower spice tolerances who want to experience the Buldak hype without the full fire. You still get the heat, it just takes its time getting there.

How does it taste

What makes this flavor special is the balance between creaminess and spice and how they interact. The milk powder in the carbonara base means the heat doesn’t hit you right away. It’s a creeping warmth that arrives a little later in the bite, which makes it addictive. There’s also a subtle tomato note that adds a touch of acidity cutting through the richness. The noodles are thick, wavy and have an excellent chew since their thickness means they pick up more sauce in every bite. Spice sits at a 3/5 which makes it accessible without being a walk in the park.

How does it compare

Against the original Buldak this is noticeably creamier and a step down in heat. The original is more aggressive and straightforward. The Carbonara wraps that heat in a milky coating that slows it down.

How to level it up

Shredded mozzarella melted over the top leans into the carbonara concept and adds extra creaminess. A fried egg with a runny yolk is an excellent addition since breaking the yolk into the sauce adds richness and slightly cools the heat. James’s suggestion of powdered Hidden Valley Ranch seasoning is an underrated move that adds a tangy herbal note that works surprisingly well with the creamy base.

Final Verdict

One of the best flavors in the Buldak lineup and a genuinely great instant noodle on its own merits. The creeping heat and carbonara creaminess make it more interesting than most instant ramens at this price point. Highly recommended as a starting point for anyone new to the Buldak world.

Cooking Note: You may notice that the cooking instructions for the Carbonara flavor are different from the original Buldak. The packet tells you to reserve some cooking water, drain the rest, then simply mix the noodles with the sauce and powder with no mention of stir frying at the end.

My suspicion is that the instructions skip the stir fry step because the milk powder is delicate and can scorch or clump if the heat gets too high. If you do stir fry it, keep the heat at medium-high and keep those noodles moving the whole time. You want to evaporate the water quickly without burning the creamy base.

In my experience following the packet steps exactly leaves the ramen quite watery. If you want a thicker result I recommend stir frying after mixing. This lets the excess water evaporate and thickens the sauce into a glaze that actually clings to the noodles rather than pooling at the bottom of the pan.

How to cook Samyang Buldak Carbonara Chicken Stir-Fried Ramen

Cooking directions per package instructions:

  1. Boil 2 1/2 cups (20 oz) of water. Add the noodles and cook for 5 minutes.
  2. Remain 1/2 cup (4 oz) of water and drain the rest. Add the sauce and cheese powder.
  3. My recommendation: Stir-fry until liquid has evaporated to your preference.
  4. Stir well and serve.

To level up the noodles, I would add some shredded mozzarella cheese and a fried egg. James thinks that adding some powdered Hidden Valley Ranch seasoning would be an amazing addition.

Going against the grain here by saying I don’t actually like this flavour much… It tastes too chemical for me. It isn’t very spicy either. I’ve tried it a few different ways (rice cakes, adding an egg and kewpie mayo, adding parmesan, topping it with chicken) but it doesn’t change it being too chemical tasting for me.

I really like it the normal way made and this is what i’ve reviewed it on, yet I do have my own recipie that I have taken inspiration from.

You cook the noodles and add these ingredients to a bowl

– Buldak Sauce

– Carbonara Packet (if you could not find carbonara flavor, use milk powder i use nido)

– Raw egg yolk

Mix it all Togather and then add some cooking water to your desire (if you have drained it all, put some boiling or hot water) Once the noodles are drained, pour them into a pan with low heat. Wait a bit until you can hear a sizziling sound then mix the noodles around while pouring in the mix. If there is too much sizzling, turn the heat down as we do not want cooked but burnt noodles.

I’d definitely always add milk and cheese to it, the powder on its own doesn’t feel enough, eggs are great and keep the yolk on the runny side if you can.
