Gluten Free Meister keeps surprising me. This is the third product from the brand I’ve reviewed and the pattern holds that the noodles are consistently the best part. The Tonkotsu Snack Ramen is their heavier, richer offering. It’s gluten-free, vegan, and MSG free.

What’s in the Package

Inside the Gluten Free Meister Tonkotsu pack, youโ€™ll find a nest of rice noodles and a single liquid soup base sachet.

How to Prepare It

  1. While the package instructions call for 3 cups of water, use 4 cups instead. Using 3 cups results in a broth that is far too intense and can feel slightly gritty. The extra cup of water thins out that heaviness.
  2. Bring your 4 cups of water to a rolling boil.
  3. Add the rice noodle nest. Boil for 3 to 4 minutes, being careful not to over-stir so the noodles stay intact.
  4. Place the liquid Tonkotsu base into your bowl. Pour the noodles and the cooking water over the base and stir gently.

How Does It Taste

The smell surprised me. I was expecting something close to a pork bone tonkotsu but what came through was more like French onion soup. It’s not a bad smell at all, just not what the label sets you up for.

The broth is thick. A 3.5 out of 5 on viscosity. It was the thickest of all the Gluten Free Meister products I’ve tried. The potato starch thickeners are doing a lot of work here and at the recommended 3 cups of water it tips into overwhelming territory. At 4 cups it finds its balance. The salt level is high and the broth is bold.

The noodles are the standout again. Wavy and flat with a chew that mimics wheat noodles really well. Every Gluten Free Meister noodle has impressed me and these are no different.

How to Level Up Gluten Free Meister Tonkotsu Snack Ramen

Narutomaki works really well here since the texture contrasts against the thick broth and the mild fishcake flavor doesn’t compete with the heavy seasoning. Use a generous amount of scallions. Fresh broccoli or spinach at the end absorb the thick broth and make the heaviness more manageable bite by bite.

Final Verdict

Use more water than the package says, load up on scallions and greens, and the noodles finally get to shine without the broth overwhelming them. The French onion soup smell is unexpected but the bowl itself is a solid option if you want a gluten-free noodle with real weight to it.
