Gluten Free Meister is a Japanese brand that consistently impresses on the noodle side, so when I saw a miso variety I wanted to try it. The packaging is bold and eye catching.

How to Prepare It

Cook the noodles in 550ml of boiling water for 6-8 minutes. Remove from heat and stir in the powder soup base.

How Does It Taste

The broth is thick, which is a good sign going in. The issue is the flavor itself doesn’t read as miso. What comes through is something much closer to green tea or a thick oolong. It’s a specific, one-note quality that caught us off guard.

This reminded James and me of the Immi flavor profile in the way it has its own distinct character that sits outside what the label suggests.

The noodles are where this brand earns its reputation. Even gluten-free, the texture holds up well and they carry the broth without falling apart. They’re the best part of this bowl and a reminder that Gluten Free Meister knows what they’re doing on the noodle side even when the broth isn’t always there.

How to Level Up Gluten Free Meister Miso Snack Ramen

The broth needs salt and smoke to ground it. Smoked brisket adds the depth and richness the bowl is missing and works well against that tea-forward base. A soft boiled egg adds creaminess and gives the broth something to cling to. A heavy handful of scallions helps cut through the unusual flavor and brings some freshness.

Shichimi togarashi is the finishing move here. The Japanese seven spice blend adds heat and complexity and does more for this bowl than almost anything else you could reach for.

Final Verdict

The Gluten Free Meister Miso Snack Ramen is worth trying for the noodles alone. The broth doesn’t deliver on miso but with the right toppings you can redirect it into a great bowl. Add an egg, your scallions, and some Shichimi and the quality of those noodles carries the bowl.
