A big thank you to Ichiran for sending me this gift. It’s their popular instant ramen, now in a vegan version. I have to say, I’m very impressed by how closely it captures the taste of their regular ramen. You still get that premium quality, even in an instant format.

The broth captures the rich umami that Ichiran is known for, with a surprising depth despite being vegan. While the viscosity was light, the broth still delivered a comforting savory flavor that echoed their traditional tonkotsu.
The texture of the noodles was smooth and easy to slurp, providing a good contrast to the richness of the broth. I actually prefer this version to their original instant ramen.
To maintain a vegan-friendly approach, I think some fresh green onions would add a lovely sharpness and a pop of color. Additionally, some thinly sliced cabbage would introduce a nice bit of crunch and subtle sweetness to the overall experience.ย
