We were gifted the Gluten Free Meister Shoyu Snack Ramen and we went in already familiar with the brand. The Miso Ramen impressed us. The Tonkotsu Snack had its moments. One thing to note before you start, the small package (snack) instructions are different from the larger version. This one says don’t drain the noodles.

What’s in the Package

Inside, you’ll find a bundle of thin rice noodles with rice flour and potato starch. The packet includes a single sachet of shoyu-flavored soup base.

How to Cook Gluten Free Meister Shoyu Snack Ramen

  1. Cook noodles in 550ml of boiling water for 5-6 minutes stirring occasionally.
  2. Turn off the stove and mix in the powder soup base.
  3. Transfer the noodle soup to a serving bowl and enjoy.

How Does It Taste

The most surprising thing about this bowl is that it tastes like Oolong tea. James said it first and I couldn’t un-taste it after that. Neither of us could explain where it was coming from.

The salt level is also a lot. The shoyu flavor is technically present but it’s not really showing up to the party.

The noodles were gummy which caught us off guard. The rest of the Gluten Free Meister range has spoiled us with impressive noodle texture. It didn’t have much of a bite like the other ones. We think the Snack version of the line may have a different formula for the noodles.

How Does It Compare

This is the weakest product we’ve tried from Gluten Free Meister. The Miso Ramen delivers on its label and has noodles worth talking about. That’s the one to start with if you’re new to the brand. The Tonkotsu Snack is bold and heavy but intentionally so. The Shoyu Snack is unfortunately neither.

How to Level It Up

Use significantly less of the seasoning packet. It’s large relative to the noodle portion and that’s where the salt issue starts. Adding considerably more water than the recommended 400ml also helps. James suggested cooking bacon directly in the water to help the flavor. It’s worth trying but keep in mind the bowl is already working through a salt situation.

Final Verdict

The Gluten Free Meister Shoyu Snack Ramen is the most puzzling product from a brand that has otherwise consistently impressed us. The Oolong tea flavor is unexpected, the salt is aggressive, and the noodles don’t have the texture we’ve come to love from this brand. Use less seasoning, more water, and go in with adjusted expectations.
