Diving into this one, it felt like a bit of a water-level gamble right off the bat. Since there wasn’t a clear fill line, I just added enough to cover the noodles, but looking back, that might have been why it ended up being a little on the salty side.

However, it really nailed the seafood flavor. It’s definitely got that strong ocean-y thing going on, but there’s also this robust onion flavor that pops through. It leans towards the sweeter side, and while it reminds me a bit of Mama noodles, it’s missing that signature lime zing.

Even with the saltiness, though, I have to say, I genuinely enjoyed it.

To make this seafood-onion fusion shine, some fresh cilantro would add a nice bright herbal note. Tender boiled squid would double down on the seafood, a squeeze of fresh lime would bring in that acidity it’s missing, a sprinkle of dry chili pepper would give it a welcome kick, and some crisp, fresh cabbage would add a refreshing crunch.
