The Siukay Seafood 7-Level Spicy Noodles is from Acecook, a well-known Vietnamese brand. The “7-Level Spicy” claim on the packaging is doing a lot of work. It sounds like a challenge and I won’t pretend it didn’t catch my attention.

What’s in the Package

Inside the package is a thick, circular wheat noodle block and three flavor components: a dry soup base powder, a separate chili powder sachet for adjustable heat, and a large liquid paste sachet. This thick sauce is a concentrated blend of seafood, garlic, and oil that gives the broth its signature deep red color and spicy punch.

How Does It Taste

The noodles are the first thing worth talking about because they stood out to us immediately. They’re thick and chewy in a way that’s closer to udon than standard instant ramen noodles. There’s a slipperiness to them that keeps them from feeling heavy or cardboard-y.

The broth sits at about a 2 out of 5 on viscosity. It has real body to it and the seafood flavor comes through clearly in the seasoning. There’s a subtle seaweed note underneath as well.

The 7-Level label is doing a lot of marketing work in regard to the spice level. For us, this registered as about a 2 out of 5. It’s a manageable, pleasant warmth rather than the kind of heat that level of branding implies. If you have a high spice tolerance like I do you won’t find this challenging at all. But the flavor is good enough that the spice level not living up to the label doesn’t really matter.

How Does It Compare

The udon-like noodle thickness puts this in a similar lane to the Koka Pepper Crab Noodles in terms of how it sits in the bowl. Both are seafood-forward with thicker noodles that hold up well in the broth. The Koka leads with white pepper and is lighter on the broth. This one is richer and more distinctly seafood in character. If you liked the Koka, this is worth trying for a different take on the same category.

How to Level Up Acecook SiuKay Seafood 7-Level Spicy Noodles

The seafood broth base is begging for real seafood toppings. Imitation crab is the easiest addition and works well here. Boiled shrimp or sliced squid take it further and bring actual protein to a bowl that otherwise doesn’t have much. Octopus is a bolder choice but the chewy texture pairs naturally with these noodles.

A sprinkle of minced garlic or garlic chips on top ties the seafood flavors together and adds a savory note that the seasoning alone doesn’t quite provide. If you want the heat to actually match the 7-Level promise, a healthy drizzle of chili oil gets you there.

Final Verdict

This is a solid seafood ramen that earns its place on the shelf for the noodle texture alone. The broth is flavorful and the seaweed depth is a nice touch. The spice doesn’t deliver on the label but the overall bowl does. Add your seafood toppings and some garlic and this becomes a satisfying meal.
