Acecook is a well known Vietnamese instant noodle brand and the Acecook Oh! Ricey Pho Noodles Chicken Flavor is one of their more interesting offerings. At only 270 calories it is one of the lighter instant noodle options I have come across, which makes the fact that it actually tastes good even more impressive.

What’s in the Package

A cake of flat dried rice noodles and three packets including a seasoning packet, an oil packet and a vegetable flakes packet.

How to Prepare It

Place the noodles, soup powder, oil and vegetable packets directly into a bowl. Pour in 400 to 450ml of boiling water, cover and let it sit for 3 minutes. Stir thoroughly before eating.

How Does It Taste

This smells like pho, which is not something you expect from an instant packet. The flavor leans heavy on chicken bouillon but the pho spice notes come through clearly with distinct hits of anise, cloves and coriander. This is a good bowl. We both have had restaurant pho that was worse than this.

The broth is thin and there is zero heat. The flat rice noodles plumped up nicely during the steep and hold up well. They feel much closer to real pho noodles than anything you would find in a standard instant package.

How Does It Compare

This is one of the more authentic feeling pho options in the instant noodle category. If you enjoy Vietnamese pho and want a quick low calorie approximation this is a solid choice.

How To Level It Up

Since the base captures the essence of pho so well you should treat it like a traditional bowl. Beansprouts add the crunch and freshness that pho needs. Thinly sliced beef dropped in right before serving will cook through in the hot broth. A fresh squeeze of lime brightens everything up and ties it together. Fresh herbs like basil or cilantro on top would complete the picture.

Final Verdict

An impressive instant pho at only 270 calories. The smell alone sets it apart and the anise and clove notes in the broth deliver on the promise of the packaging. The noodles behave like real pho noodles.
