Paldo Mala Bibimmen is a cold noodle dish. You boil the noodles, rinse them in cold water, and toss them in a mala-flavored sauce. Feels like it would be a perfect summer meal.

What’s in the Package
Inside the packaging, youโll find a square block of thin, fried wheat noodles and two sachets. The red sachet contains the Mala liquid sauce, and the white-and-red sachet contains the topping flakes.

How to Cook Paldo Mala Bibimmen
- Bring 600ml (approx. 2.5 cups) of water to a boil.
- Add the noodles and boil for 7 minutes.
- Drain the noodles and immediately rinse them under cold running water until the noodles are chilled. Drain thoroughly.
- Place the cold noodles in a bowl, add the liquid sauce sachet, and stir well.
- Sprinkle the topping flakes over the noodles and serve.
How Does It Taste
The flavor is a good tomato umami base with a pleasant mala spice that shows up at the end of each bite. Spice is a medium 3 out of 5. It’s noticeably less than Buldak but present. The mala tingle is there if you’re looking for it.
The noodles are thin and spaghetti-like. They reminded me of rice vermicelli but they’re not. They took a surprisingly long 10 minutes to boil which caught us off guard. James and I both recommend checking them at 7 minutes instead for better snap. After boiling you rinse them in cold water which sets the texture and prepares them for the sauce.
How Does It Compare
This is one of the few cold noodle formats so far on the site. The closest comparison in the Paldo lineup is the Paldo Jjajangmen in terms of a dry sauce format, but the Jjajangmen is served hot and has a completely different flavor profile.
For the mala spice angle the Yumei Tianshui Malatang Hot Pot is the most relevant comparison. Both lean into the Sichuan mala flavor but in completely different formats.

How to Level Up Paldo Mala Bibimmen
Sliced pickled radish adds a refreshing crunch and a mild sourness that works naturally against the mala spice. A crispy fried egg on top adds richness. Both help if you want to turn this into something more substantial.
Final Verdict
A fun format that doesn’t show up often in the instant ramen space. The cold noodle with mala sauce combination works and the tomato umami base is more interesting than expected. Just don’t follow the cook time on the package. Pull the noodles at 7 minutes.
