Omachi Spaghetti Instant Noodles is a Vietnamese instant noodle with a strong tomato flavor that hits you the second you open the packet. It smells exactly like sweet spaghetti. And then it tastes exactly like sweet spaghetti. Specifically the kind you’d get at a school cafeteria and I mean that as a compliment.

What’s in the Package

Inside the packaging, youโ€™ll find a square block of fried wheat noodles and three sachets. There is a transparent vegetable sachet containing dried leeks, a silver sachet labeled Sauce (1), and a silver sachet labeled Spaghetti Sauce (2).

How to Cook Omachi Spaghetti Instant Noodles

  1. Bring approximately 400ml (1.5 cups) of water to a boil.
  2. Add the noodle block and the vegetable sachet. Boil for 4 minutes.
  3. Drain the water thoroughly and place the noodles in a bowl.
  4. Add the Sauce (1) and Spaghetti Sauce (2) sachets to the noodles.
  5. Stir well until the noodles are fully coated in the red tomato-based sauce.

How Does It Taste

The tomato flavor is front and center and it’s sweet in that distinctly nostalgic way. It reminds me of a childhood school lunch spaghetti and that’s the whole identity of the bowl. It’s not trying to be a ramen. It’s a Vietnamese instant noodle that’s leaning fully into a sweet tomato pasta direction and it works.

The noodles are potato and egg based like the other Omachi variety we’ve reviewed. That combination gives them a chew and sturdiness that standard wheat noodles don’t have. They feel stronger and hold up well in the tomato broth which has a 2 out of 5 viscosity. Not thick but not thin either.

I first tried these during last year’s instant ramen challenge and turned them into a Filipino-style ramen. It worked really well in that format and I’ll be making a proper recipe with this one eventually.

How Does It Compare

Within the Omachi lineup the Spaghetti is the more surprising of the two. The Potato Noodles Beef Flavor is the more straightforward Vietnamese noodle. The Spaghetti has a completely different flavor direction and a personality that stands on its own. The Samyang Tangle Chunky Tomato Pasta is the closest comparison in the tomato instant noodle category but leans more Italian where the Omachi leans sweet Vietnamese-style tomato.

How to Level Up Omachi Spaghetti Instant Noodles

Ground beef mixed in builds on the tomato base naturally. A generous amount of Parmesan leans into the Italian-adjacent direction the bowl is already going. Roasted cherry tomatoes deepen the tomato flavor and add a sweetness that the sauce is already working with.

Final Verdict

It’s a fun bowl with a flavor identity that’s hard to find anywhere else in the instant noodle space. The sweet tomato spaghetti profile is nostalgic in the best way and the potato noodles back it up with real texture. One of the more surprising finds in the Vietnamese instant noodle category.
