We’ve tried Gluten Free Meister before and the noodles have always stood out. This Tonkotsu variety caught our attention because a solid gluten free tonkotsu is hard to find.

How to Prepare It

One thing worth flagging from our experience: these noodles absorb moisture quickly. We recommend bumping the water up to 500ml and extending the cooking time to 6 minutes. It makes a real difference in the final texture.

How Does It Taste

This one surprised us, and not entirely in the way we expected. Tonkotsu should be a creamy, rich pork bone broth and the broth here does have a subtle creaminess to it. But the dominant flavor that comes through is a strong artificial soy sauce note rather than the pork depth you’d expect from a tonkotsu. It’s a noticeable difference from what the label suggests.

It’s not unpleasant, it’s just not what it says it is. Going in knowing that it leans soy sauce forward rather than tonkotsu helps manage expectations.

The noodles are a different story. Gluten free noodles at this quality level are impressive. They need the extra cooking time to get where they should be, but once they do, the texture holds up well. For a gluten free instant noodle these are the best ones that we’ve had.

How to Level Up Gluten Free Meister Tonkotsu Ramen

The broth responds well to additions that lean into the soy sauce character rather than fight it. Boiled bacon added directly to the pot brings some of the pork richness that the broth is missing. Napa cabbage adds freshness and cuts through the saltiness. Together they help the bowl find its footing.

Final Verdict

The Gluten Free Meister Tonkotsu Ramen is a tale of two things. The noodles are very good and worth seeking out if you’re looking for quality gluten free instant noodles. The broth doesn’t deliver on the tonkotsu promise but works well enough as a soy forward base with the right toppings. Adjust the cooking time, add your additions, and there’s a solid bowl here.

Another great gluten free option my kids and family love with soft boiled egg and sliced ham and sesame oil. Love the flavor of this one and the noodles stay together well and have a chewy texture which makes it unlike many other rice noodle ramens.
