I’ve tried a few products from Gluten Free Meister now and the noodles keep impressing me every time. The Gluten Free Meister Miso Ramen is their most straightforward flavor and it’s gluten free, vegan, and MSG free. It doesn’t feel like a compromise product though.

How to Prepare It

  1. While the package suggests using 1.5 cups of water, use only 1 cup instead. This keeps the miso flavor at the density it should be. Otherwise, the broth gets diluted to the point where the flavor is noticeably thin.
  2. Bring your 1 cup of water to a boil in a small pot.
  3. Add the rice noodle nest. Boil for 3 to 4 minutes.
  4. While the noodles cook, squeeze the liquid miso sachet into your serving bowl.
  5. Pour the noodles and the starchy cooking water into the bowl. Stir gently to incorporate the miso paste until the broth is smooth and creamy.

How Does It Taste

The broth has a strong miso scent with a slightly tangy note from the soy-bamboo seasoning. If you’re used to a big savory hit this might feel mild. But if you want something that feels light and doesn’t weigh you down, this is the one.

The noodles are the standout again. Made from white rice flour and potato starch they have a real chew that mimics wheat ramen way better than you’d expect from a gluten-free product. Every Gluten Free Meister noodle I’ve tried has impressed me and these are no different. They hold up in the broth without going soft.

How Does It Compare

This is the most successful product in the Gluten Free Meister lineup I’ve reviewed. The Tonkotsu had a broth that didn’t quite match its label. This one does. Start here if you’re trying the brand for the first time.

How to Level Up Gluten Free Meister Miso Ramen

Stir a scoop of red miso directly into the broth. It adds the savory punch that the MSG-free seasoning naturally lacks. Start small and adjust. A pinch of bonito dashi adds umami without MSG and bridges the gap between light and rich. Silken or firm tofu works well here since it absorbs the miso broth nicely. Scallions and sliced onion on top.

Final Verdict

The Gluten Free Meister Miso Ramen is the best product I’ve tried from this brand. The miso flavor is clean and actually present, the noodles are impressive as always, and the gluten free vegan credentials make it accessible. Use less water than the package says, add red miso and bonito dashi, and this is a solid bowl.
