The Lotus Foods Jade Pearl Rice Ramen Wakame Miso Soup is one of the more visually distinctive products I’ve reviewed on this site. The noodles are made from organic rice with bamboo extract worked into the noodles which gives them a green color. James and I both stopped to look at them before we even cooked them.

What’s in the Package

Inside is a rectangular block of green, wavy rice noodles and a single silver sachet containing the miso soup base.

How Does It Taste

The seaweed and vegetable smell hits you when the noodles finish cooking. It’s earthy and oceanic and it smells like what it’s made from.

The broth looks exactly like miso soup. James and I both expected more from the taste. It’s very mild. It’s closer to lightly flavored water than an actual miso broth. The umami just isn’t there.

The noodles have a green color that is appealing and the organic rice base gives them a chewier texture than wheat noodles at a 2 out of 5 on thickness.

One important note: the package says 4 minutes but even at 5 minutes the noodles weren’t fully cooked. We found 6 minutes was the right call.

How to Level It Up

We would add a pinch of salt first. The broth is so mild that basic seasoning makes an immediate difference. Then stir a spoonful of red or white miso paste directly into the broth.

A small amount of soy sauce or bonito dashi adds umami without changing the character. The add a few cooked shrimp dropped in before serving.

Final Verdict

The Lotus Foods Jade Pearl Rice Ramen is a visually appealing noodle that needs help on the flavor side. Cook them for 6 minutes, stir in miso paste and a pinch of salt, add some shrimp, and that would help a ton.
