The peanut sauce base is already doing the heavy lifting so the additions should complement rather than compete. More sesame seeds on top reinforce the nutty profile and add a little crunch. If you want more heat than the slow burn the spice packet gives you, a small spoonful of chili sauce or chili oil on top is the move.
For protein, boiled shrimp is the perfect match. The clean sweetness of the shrimp cuts through the rich peanut sauce without fighting it, and the two flavors together are a natural combination.
