Sometimes you need a little twist on your classic instant ramen, and this recipe delivers. We’re taking the comforting beefy flavor of Sapporo Ichiban and kicking it up a notch with salty corned beef and a welcome punch of jalapeno heat. It’s a surprisingly delicious combination that’s easy to whip up.

Ingredients

- Sapporo Ichiban Beef Flavored Instant Noodles: our beefy noodle base. We’re holding back on the seasoning and only using half the packet; the corned beef is going to bring all the saltiness we need.
- Canned corned beef: This is our salty, savory secret weapon that gives the ramen an additional beefy element.
- Jalapeno: Delivers a vibrant kick of heat and color that cuts through the richness.
- Trumpet mushroom: Adds an earthy and slightly chewy texture that’s great with these noodles.
- Green Onions: Adds a fresh, mild oniony taste that adds a final touch of flavor and visual pop.
How to Make This Recipe

- Cook the Sapporo Ichiban noodles for 2 minutes in boiling water, but do not add the seasoning packet yet.
- Reserve about a quarter cup of the cooking liquid
- Drain the rest of the water from the noodles. Set the noodles aside.

- In the same saucepan (or another skillet), add the canned corned beef over medium heat. Cook for a couple of minutes, breaking it up with a spatula.
- Add the diced jalapeรฑo to the corned beef and cook for another minute, allowing it to soften slightly and release its heat.
- Stir in the chopped trumpet mushroom and cook for a couple of more minutes until it starts to soften.

- Pour the reserved noodle cooking liquid into the saucepan.
- Add up to half of the seasoning packet from the Sapporo Ichiban Beef Flavored Instant Noodles and stir well to combine with the corned beef and vegetables. (I find adding any amount over half the packet too salty for me.)
- Add the cooked ramen noodles to the saucepan and toss everything together until the noodles are coated in the flavorful mixture.
- If the mixture seems too dry, you can add a little extra water to reach your desired consistency.

- Assemble in a bowl and garnish with freshly chopped green onions. Serve immediately and enjoy this savory and slightly spicy upgrade.
Plating
Arrange the noodles, corned beef, mushrooms, and jalapeรฑos in a bowl. The bright green of the onions will add a nice visual contrast.

My Pro Tip
Recipe Tip
Be mindful of the saltiness of the corned beef. Taste as you go!
Yes, you could use leftover cooked beef or sear some ground beef, but the distinct flavor of corned beef works particularly well here.
Yes, other mushrooms like shiitake or oyster would also be tasty.
The spice level will depend on the jalapeรฑo you use and how much you add. Start with a small amount and taste. Since I like my food spicy, I also like to add a drizzle of sriracha to this dish.
