Mama Shrimp Tom Yum noodles are more than just instant ramen to me. They’re a taste of childhood…the noodles that were always in our pantry.

Since I had absolutely no cooking skills as a kid, my younger brother and I learned to simply open a can of Vienna sausages and add them to our bowl of noodles and seasoning before pouring in hot water and covering it with a lid. It was an easy way for us to make a meal. This recipe version isn’t much harder but substantially levels it up.

Ingredients

  • Mama Shrimp Tom Yum Instant Noodles: Provides the classic, tangy, and savory Tom Yum flavor base.
  • Canned Vienna Sausages: Adds a quick and easy source of protein with a familiar, slightly salty taste.
  • Egg: Creates a rich and creamy element when poached directly in the broth.
  • Green Onions: Brings a fresh, mild oniony flavor and a vibrant green garnish. Here’s my guide on how to prepare green onion.
  • Jalapeno Slices (optional): Offers a customizable kick of heat for those who like it spicy.
  • Fresh Lime Juice: Adds a bright acidity that enhances the Tom Yum flavor.

How to Make This Recipe

  1. Bring 2 cups of water to a boil in a small pot. Add the Mama Shrimp Tom Yum seasoning packets to the boiling water.
  2. Add the Mama Shrimp Tom Yum noodles and drained Vienna sausages to the pot. Cook for about 2-3 minutes, or until the noodles are mostly cooked.
  3. Create a small well in the center of the noodles and carefully crack the egg directly into it. Cover the pot and let the egg poach in the simmering broth for about 1-2 minutes, or until the whites are set and the yolk is still runny (or cooked to your preference).
  4. Carefully pour the ramen, broth, Vienna sausages, and poached egg into a bowl.
  5. Garnish with thinly sliced green onions and jalapeรฑo slices (if using).
  6. Finish with a squeeze of fresh lime juice. Serve immediately and enjoy this upgraded taste of childhood!

Plating

Make sure the poached egg is visible and intact on top of the noodles. Arrange the Vienna sausage around it and sprinkle the green onions and jalapeno for color.
